One of my favorite dishes is spaghetti carbonara. It's a classic Italian pasta dish that is simple to make but incredibly delicious. Here’s how I prepare it:
Ingredients:
- Spaghetti (400g)
- Pancetta or guanciale (150g)
- Eggs (2 large)
- Fresh Parmesan cheese (100g, grated)
- Black pepper
- Salt
- Fresh parsley (optional, for garnish)
Instructions:
Cook the Pasta: Start by boiling a large pot of salted water. Once it’s boiling, add the spaghetti and cook according to the package instructions until al dente.
Prepare the Sauce: While the pasta is cooking, dice the pancetta or guanciale into small cubes. In a frying pan over medium heat, cook the meat until it's crispy and golden. This usually takes about 5-7 minutes. Remove the pan from the heat.
Mix the Eggs and Cheese: In a bowl, whisk together the eggs and grated Parmesan cheese. Add a generous amount of black pepper. This mixture will create a creamy sauce when combined with the hot pasta.
Combine Pasta and Sauce: Once the spaghetti is cooked, reserve a cup of pasta water, then drain the pasta. Quickly add the hot pasta to the pan with the pancetta or guanciale. Mix well to combine the flavors.
Create the Creamy Sauce: Remove the pan from the heat and pour the egg and cheese mixture over the pasta, stirring quickly. The heat from the pasta will cook the eggs gently, creating a creamy sauce. If the mixture is too thick, add a little reserved pasta water to achieve your desired consistency.
Serve: Plate the spaghetti carbonara immediately, garnishing with extra Parmesan cheese, ground black pepper, and chopped parsley if desired.
This dish is comforting and satisfying, and it's perfect for any occasion. Enjoy!
