  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Prepare the Broth:
    In a saucepan, bring the vegetable broth to a simmer. Keep it warm over low heat as you'll be adding it gradually to the rice.

  2. Sauté the Vegetables:
    In a large pan, heat the olive oil and butter over medium heat. Add the chopped onion and cook until it's translucent (about 3-4 minutes).
    Then, add the minced garlic and sliced mushrooms to the pan. Sauté everything for about 5-7 minutes, or until the mushrooms have released their moisture and are nicely browned. Season with a little salt and pepper.

  3. Toast the Rice:
    Add the Arborio rice to the pan with the mushrooms and onion. Stir for 1-2 minutes until the rice is well-coated with oil and starts to toast lightly. This step enhances the flavor of the rice.

  4. Add the Wine:
    If using, pour in the white wine and stir until it's mostly absorbed by the rice. This will add a lovely depth of flavor.

  5. Gradually Add Broth:
    Start adding the warm vegetable broth one ladle at a time, stirring frequently. Wait until most of the broth is absorbed before adding the next ladle. This process will take about 18-20 minutes. The rice should become creamy and tender but with a slight bite (al dente) at the end.

  6. Finish the Risotto:
    Once the rice is cooked to your liking, remove the pan from heat. Stir in the grated Parmesan cheese until it's melted and well combined. Adjust seasoning with more salt and pepper if needed.

  7. Serve:
    Serve the risotto warm, garnished with fresh parsley if desired.

Tips:

  • You can add other ingredients such as peas, asparagus, or spinach to customize your risotto.
  • For a vegan version, skip the cheese or use a non-dairy substitute.
