Почему так

• at — «точка во времени» и устойчивые выражения: at 5.30, at night, at the weekend, at Christmas/Easter, at the moment.
• on — дни и даты: on Monday, on 8 July, on Monday morning, on my birthday, on New Year’s Eve.
• in — более длинные периоды: in August, in 2018, in autumn, in the morning/evening, in the summer.

Важные исключения: говорим in the morning, но at night; at Christmas/Easter — про праздничный период, а on New Year’s Eve — про конкретный вечер. В британском варианте — at the weekend (в американском бывает on the weekend).
