Dialogue 1 (the beginning of the page is cut off)
Supplier: Of course. Here's the strawberry — dry, with no excess moisture, a deep colour. We deliver raspberries and blueberries in ventilated trays so they don't go "stuffy".
Chef: (examining them) They look fine. But I'll still check the smell and taste a couple of berries. For mousses and sauces we need perfect sweetness and aroma.
Supplier: I understand. If you have doubts about any item, just tell me — I'll replace it from the reserve straight away. We have another batch in the van.
Chef: Thank you, that matters. The strawberries are a bit on the sour side right now. Could you swap them for the ones in your reserve?
Supplier: Yes, of course. I'll bring them now. I apologise once again for the discrepancy.
Chef: The main thing is that the quality stays consistent in the end. Please sign the acceptance certificate with a note about the replacement.
Supplier: Will do. And for the future: if you need a separate batch for desserts, we'll reserve it right away and mark it "for the pastry department".
Chef: Excellent, that's what we'll do. Thank you for acting so quickly.
Dialogue 2. Planning the dessert menu and discussing seasonality
Participants:
- Head pastry chef
- Sous-chef (assistant to the head chef)
Sous-chef: Lena, we need to update the dessert menu for the summer season. We want to move away from heavy chocolate cakes towards something lighter.
Head pastry chef: Yes, I agree. In summer, berry and fruit desserts work better — mousses, sorbets. On top of that, we can put the emphasis on local produce: it's exactly the season for strawberries and sweet cherries.
Sous-chef: What about a vegan option? We had requests from guests last season.
Head pastry chef: We'll make a berry mousse on plant milk — coconut or oat. It's important to keep the texture so that it isn't watery. I'll add agar-agar instead of gelatine.
Sous-chef: Good. And what about the presentation? We want it to be not only tasty but also photogenic.
Where the translation decisions come from
- Professional terms have fixed equivalents: шеф-кондитер → head pastry chef, су-шеф → sous-chef, сорбет → sorbet, агар-агар → agar-agar.
- "Десертная карта" is not map — in a restaurant context it's a menu (or dessert list).
- "Акт приёма" — a delivery document, so acceptance certificate (also acceptance report).
- "Черешня" — sweet cherries (not cherry, which usually means вишня).
- "Фотогенично" for a dish → photogenic (colloquially Instagrammable).
- Живая речь: (осматривает) → (examining them): in English the object is usually added, otherwise the phrase sounds incomplete.
